1 lb. ground beef
2 cups frozen pepper and onion stir-fry
1 can (11 oz.) super-sweet corn
1 can (4.5 oz.) chopped green chilies
1 pkg. (1.25 oz.) taco seasoning mix
1 jar (8 oz.) taco sauce
3 cups coarsely broken white corn chips
8 oz. (2 cups) shredded Mexican cheese blend
Spray 13×9 dish with cooking spray. Cook ground beef; drain. Add stir-fry, corn, green chilies and taco mix; mix well. Cook 5 minutes or until bell peppers and onions are tender, stirring frequently. Stir in taco sauce. Remove from heat. Spoon 1/2 of the beef mixture evenly in bottom of dish. Cover with 2 cups of chips. Sprinkle 3/4 cup of cheese over chips. Spoon remaining 1/2 of beef mixture evenly over cheese. Sprinkle with 1 cup cheese. Top evenly with remaining 1 cup of chips. Spray foil and cover dish. Refrigerate 4 hours or overnight.
When ready to bake, heat oven to 375*. Bake, covered, 20 minutes. Uncover; sprinkle with 1/4 cup cheese. Bake uncovered an additional 5-10 minutes or until thoroughly heated and cheese is melted.
